Yes, very easy to work with once thinned out.
Ceilings only will have texture, walls will be completely smooth. The only reason to texture is to hide imperfections, and the only place you usually see them is in a ceiling.

The blue you see on the wall is the patching compound the drywallers use if there is imperfections in the final coat of drywall compound.

Not looking to rent out at all, I want to be able to enjoy being married to my wife for a while once it is complete.
I agree, cannot wait to get it painted and get it done, going to be a nice open space for the office that is for sure.
