theres no reason to brine a turkey when you deep fry it ... deep frying doesnt remove moisture like an oven does

you pat it dry w/ paper towels or like jess suggested you can inject it w/ seasoning.

It's still the same thing... just smaller.... Turkey and chicken don't differ as much in taste as duck... if you stuff the other two in a duck, it would taste different
