Default Need date-dinner ideas

I have a girl coming over on Wednesday and I want to cook something nice. She's lactose intolerant but can have lactose free butter, soy or almond milk, but NO cheese. She also prefers white to red meat, but it is not a requirement.

I'd like to do a 3 course meal: app, dinner, dessert. I also want it to be of medium difficulty (not too hard, and no mac'n'cheese). Ideas?

Too picky. Give her cheese dip, followed by a baked potato with sour cream and cheese and a nice thick juicy steak then follow up with cheesecake for dessert, then call Lab over for some gang bangin fun.

Seriously, cook some sort of fish h: You can't undercook the things but you'll know when you've over cooked it

Seriously though. Make some hummus and pita bread for appetizer. Cornish game hen with rice for the main course. Chocolate mousse for dessert.
