simple chicken breast recipes?

No Peek Chicken Recipe

INGREDIENTS:

1 can (10 3/4 ounces) cream of mushroom soup
1 can (10 3/4 ounces) cream of celery soup
1/2 soup can water
1/2 soup can dry white wine
1 package long grain and wild rice mix with herb seasoning
8 pieces chicken
1 package dry onion soup
PREPARATION:

Mix cream soups, water, and wine with the rice mix; pour into a 13x9x2-inch baking pan. Place chicken pieces on top and sprinkle dry soup mix over all. Cover with foil and bake for 2 hours at 350°.

I also use greek, red pepper vinigarette, and tons of other types of dressings... Then I usually put it on top of romaine lettuce, along with chopped tomatos, paresean cheese, grated mozz, crushed black pepper, crutons, etc plus whatever dressing was used for marinade. yum.

Also, spanish style chicken and rice.

why chicken breasts?

i find that rotisserie whole chicken is the best and most juicy way to cook chicken.

plus you can convert said chicken in fajitas, chicken salad, chicken w/ rice....etc. FTW

i usually just marinade chicken in a big bag with italian dressing for a night.. then use bbq sauce on the side.

I do the italian marinade with my new york steaks...but I use zesty italian.

As an alternative to marinating:

1) I recommend a dry rub of rosemary, garlic powder and a wee bit of curry.

2) Then, over a searing hot skillet, spray a fine mist of olive oil and sear both sides of the chicken breast.

3) Once that's done, turn the heat way down and cover for 4-6 minutes, allowing the moist heat to slow cook.

4) Serve with rice and or sauteed onions, with a drop or two or worcestershire sauce.

Virtually no fat.
