This is the first time I've had to prepare squid. Kinda gross and time-consuming but it's not hard.

Let's see.
Bout a month ago, bacon wrapped scallops, beef tenderloin fillets, grilled artichokes and grilled new potatoes...
Beer-marinated flank steak with aji sauce, grilled asparagus and fingerling potato salad...
Leftovers from the steak & other stuff made into a scramble...eggs, jalapenos, onions, tomatoes, cheddar & an English muffin...

Cowboy Jason's Chili Verde:
3 pounds of pork shoulder, trimmed of excess fat and cut into 1-inch cubes
Oil for browning
1 pound of tomatillos, chopped
1 onion, chopped
4 cloves garlic, minced
4 (or more) Anaheim chiles, chopped
2 jalapeno chiles, chopped
4 cups of chicken broth
4 tablespoons of cumin
2 teaspoons of oregano
Salt and pepper to taste
Heat a pot or dutch oven and add oil.
Brown the pork, remove and set aside.
Brown onions.
Add tomatillos, garlic, Anaheim chiles, japapeno chiles, chicken broth, cumin, and oregano.
Simmer for about 30 minutes, until everything is tender.
Season with salt and pepper.
Using a stick blender, blend the veggie mixture into a smooth sauce.
Add the pork back into the pot.
Simmer pork in the sauce for two hours.
Serve with rice and black beans.
Sorry, no pics, haven't made it for awhile.

red onion, romaine, green onion, pepper jack and kumato tomato.
www.kumato.com - i recommend trying them if you like tomato, even if you don't. they are fucking delicious. i'm not a huge of tomato, really only like it on burgers or tuna sandwiches. sometimes i'll enjoy large slices in a fresh salad. these tomatoes are brown / green, but have the best flavor ever. they aren't even that expensive. i got a five pack for maybe $3.
and of course clausen (only pickle i use, no homo) sweet bread and butter pickles.

So, where do you buy kumatos tomatos? I looked at the website but it seemed like there are only chains that carry them in Europe.
