I just noticed yesterday the 16g came down in price to $289 which is only about $70 more than the 8g so it really depends on your needs and hoarding.
I am debating on the iPhone now, but I need to do some research on hacking it for other service providers before I decide. I like my T-Mobile right now.

5-Row QWERTY Keyboard - adds a new numbers row to your keyboard
BossPrefs - Advanced settings control
Categories - Create folders for apps
Clippy - Copy, paste hack
Extended Preferences - Adds more options to Settings
Five Icon Dock - Lets you have 5 icons docked instead of just 4
Flashlight - Flashlight app. Much brighter than the Apple app.
iMobileCinema - Safari app for flash videos
Installulous - Allows you to install downloaded IPAs(Apps)
KeepAwake - Keeps your wifi connection awake
MakeItMine - Allows you to change your carrier name
MxTube - Allows you to view and download youtube videos

I had Boss prefs but no real use for it myself.
Categories doesn't seem to be working on my Touch at least not as described. I placed apps in it and it never made a desktop folder nor would it let me access the apps without moving them back to the desktop...not what I wanted I guess or it isn't working.
