I wouldn't say i'm jumping out of the water at every opportunity to hang out with her, it's just that I haven't seen her in like a month (that whole timing thing, again), and i really wanted to see her.
I picked up on these two paragraphs.
IMHO
1. She thinks of you as just one of the "girls" and hence you are in the friend zone. This is why she invited you out on a "girls" night.
2. RE: The beer situation. She won't take a beer from a guy, but she takes one from a chick. Combined that the night was an all girls night (except for you), have you ever thought that this chick could be a lesbian? You're the lesbian version of a (pardon the term) *** hag.

If you want to find out if she's into you, the next time she invites you out on what appears to be a "girls" night you have to aggressively hit on every single one of her friends. If she gets jealous, it could be the catalyst of you two getting together.
If every girl turns you down, then you know the pack of em are lesbians. Even though you won't get any, hanging out with a pack of hawt lesbians isn't a bad thing. Maybe they'll even let you watch.
Tonight, she invited me out with all her friends (all girls). It was alot of fun... went to a bar with open mic, etc. I keep wondering if she is just putting me through the paces... seeing if I can get along with the people that she spends alot of time with.

I think her reason about not wanting to drink is completley legitimate. I've been asked to bars tons of time.. but decline because I'm just not in to that shit anymore.
Once you stop paying attention to her, she'll start thinking ":wtf:why is he not paying attention me like he used to?"
Next thing you know, she'll be the one actively seeking you out (that is if she isn't a lesbian).
