Things i've made:
Steak Chili
Chicken Chili
Beef Chili
Guiness beef stew
Curry chicken
pulled bbq beef
pulled pork (yes, i know those 2 are cheating compared to smoking).
Beef Strogenof

Just about all of them I prep and pre-cook in the dutch oven skillet before i transfer to simmer.

I'm going to have to stop by the store on my way back from the library. Get some pork, bbq sauce, and some other stuff.

Make some pulled pork, and some beef stew

the way I make pulled pork:

In the crock pot, about 2lbs pork roast
2 onion slices under the roast
garlic, salt, pepper, cap or so of liq. smoke
2 more slices of onion
Add water
cook 5hrs or so
drain fluid
pull the pork apart w/ forks, add bbq sauce and more liquid smoke if needed. don't go overboard tho.

I got a really nice crockpot a few months ago and its still in the box. I need to find some good recipes but I'm always gone for way more than 8 hrs...can you cook for 10-11?

10-11 should be fine. if you're cooking a slap of pork or beef you want to let it cool down to near room temp or it may become dry.

Cook it on low.

I made pulled bbq chicken. Few onion slices, boiled some chicken, poured a bottle of bbq sauce on it, let it cook for 9-10 hours on low, shredded the chicken partway through

With beef I use the natural juices. Pork seems to cook better with to me.
