Pirates 3 has already been filmed, well atleast 99% of it or so... it was done during the filming of Pirates 2... so yes they are just stretching it 
They did this because Orlando Bloom was going to be busy with other movies till like 2010 or some weird schedule like thath:

That ending was pretty unrealistic to me.
Slob guy is banging Aniston, guy finally gets called on being a slob and actually needs to be a good boyfriend, decides that its not worth it and bounces.
