A question....
In all seriousness, if you're used to power steering, you should keep it, if you adapt quickly, or could use the arm exercise, you'll only see about 5 HP, which might be worth a tenth or two at a test and tune, but I would replace the belt for the drive home.
A/C I'll gladly rip out all the time, but PS... I'd think seriously about, cars feel like they turn slower than slugs on the salt flats when they're heavy enough to benefit from power steering and you don't have it.
