I liked the 870, as it fires 2 3/4 and 3 inch shells.
Did you mean that you have to take your hand off the stock to kick the safety on the Remington, and not the Mossburg?
I was looking at the 500 because it was brand new, and only a couple bucks more. I think it comes with the full stock, and the pistol grip kit.

I would not get a mossberg with a pistol grip. One of the advantages a mossberg has over a remington (arguably) is safety position. you lose that and have to take your hand off of the grip to manipulate the safety.
i'm partial to an 870 over a 500 but it comes down to personal opinion.

Picked up a beater 870 at the gun show yesterday. 
$180 OTD
It's not perfect. Has some surface rust and some wood blems (and looks like someone had some fucking duct tape on the stock) but it will do what I need it to do (kill tree rats and double as a spare HD gun.)
