I prefer the taste of well done meat, not super worried about it being pink, though I do have concerns on the rare occasion that a fast food burger isn't well done. (always still eat it though

I don't really worry about milk until it smells weird or is several days past due, I've had 5 day past due milk that was still OK and also had milk go bad a couple days before it's date.

I like my meat almost bleeing. Medium-rare is as done as I ever get it. Steak tartare is one of my favourite hungover and brunch foods.

I drink tap water and eat food past its expiration, get the regular bacteria and shit, and I am almost never sick. When I am sick it's a very light case of whatever.
Milk one week past? If it doesnt smell that bad... and isn't curdled and tastes ok... I'll drink it. Meat that has gone grey other than chicken, I'll eat it.
