I don't really worry about milk until it smells weird or is several days past due, I've had 5 day past due milk that was still OK and also had milk go bad a couple days before it's date.
Exactly what I do with milk. Doesn't matter what day past. I'll smell it. If it isn't too raunchy, i'll pour it out and if there are no curds and it doesn't taste TOO sour, i'll drink it.

I like my meat almost bleeing. Medium-rare is as done as I ever get it. Steak tartare is one of my favourite hungover and brunch foods.
