I would either go SUSE or http://www.pcbsd.org/

SUSE will match what you have in class, and PCBSD is the most user friendly UNIX I've run into.

Hmm. Maybe I'll try PCBSD. If I like SUSE I can always delete PCBSD and put it on.

Do I just need the primary installation CD, or do I need the other two?

Just get CD #1. Second is languages and a bunch of software.
