no matter what, if you're taking the head off, I'd be reaplacing the head gasket. One of those things where it's worth the 20-40 bucks to not warp a head that you can resell when you're done with it.
The timing belt, you're gonna need the z6 one as far as I know. I know the b7 head is taller, so that definitely won't work, but I can't remember which one I've ended up using in teh past.

is it the metal or composite gasket? The compostie style is crappy for this swap anyway, and will lower the compression enough to make you unhappy in the end.

it was the composite gasket i think not to sure. it was like 28 buck but ill change it
