Is safe to say that, with proper equipment, you can make the cylinders bigger and actually turn my 1.8L engine into a 5.7L engine?

No it would not be safe to say that.

For example Porsche was only able to bore and stroke their 2.7L engine to 3.8L. They had to start with a new block after that for various different reasons but they could not bore that engine block much more.

1.8L you can probably go 2.0L or 2.1L but that's would probably about the max for street use.

I'm just exaggerating there. But how about into a 2L?

Have a look at this: http://www.bojangs.com/calculator/

Wrong link... I meant this: http://www.c-speedracing.com/howto/c...c/compcalc.php

If I were to make my 1.8L into a 2L, would that be safe? Would I have to replace anything?

You can get things called Stroker Kits which supply you with parts to give your car bigger displacement. You can make a (B-series) 1.6 into 1.8, 1.8 into 2.0, (H-series) 2.2 into up to 2.5 I think.

Think of it as using a giant drill bit to drill the piston hole bigger. You can only "drill" it out so much before it rips apart, so think of it like that when thinking how much you can bore a car out to. 1.8 to 5.8 would have bored the whole block into a fine powder.
