it's kinda tough ... best used for stew. its really not all that bad. i don't eat it very often maybe once every couple years, its just too much work honestly. after skinning and cleaning you are left with very little meat so you need a handful of them for a meal. its much easier to get 2 rabbits for a stew than a half dozen squirrels.
havent had rabbit stew in a very long time. I don tusually like the very "strong" tasting meet though. I dont really like duck and deer and african game meets.

elk is very gamey tasting. i freaking love it!
venison is awesome
aligator while i've only had it twice is something i would eat again, its good
caribou is great
moose is really good
bufallo is also really good, just like beef with a slightly different taste, very tender
and there are alot of field birds that are really excellent

My stepdad shot a goose a couple days ago on his property and my mom cooked it last night for dinner. It was a little tough but very yummy. It was like all dark meat.
