You know gift cards don't benefit anyone but the store itself. Also, think about it... Would you rather receive cash or a gift card. With a gift card you can only spend the money at a specific place. With cash you can buy anything you want. Screw people that say giving cash as a gift is cheesy. I would take cash over a gift card any day of the week. There is no other incentive to buy gift cards other than "People think giving cash is cheesy and I suck at gifting so I am going to get them a gift card".

 

If you come up with nothing better than gift cards, buy like 5 of them for different places and make her go on a scavenger hunt for them. Have a nice note with each one giving her the clue to the next one. Have a coupon for "Driving you to all these stores and carrying all your purchases, and no complaints at all" with the last gift card.
