I would have stayed with the stock V6 but then it hits side clearance issues.
V8 would be fun but much larger than the v6 is.
I6 would be perfect
4 banger would be prime since speed is not really a goal and it just has to get down the road.

Do you really think anyone but those who know give a shit about JDM parts or how bland it all looks?

Small audiences is what every hobby is about, if it catered to the masses it wouldn't be any fun or unique.
