There is an issue of Hot Rod magazine that talks about painting in your garage and how to set it up so you get rid of dust and ventilation issues and can do a clean paint job in your garage.
I don't have the mag but it was a couple years ago and was a very good article. I think they ended up painting a 57 Chevy in their setup.

Pick plastic sheets to drape over your drywall and insulate anywhere that you can. There's plenty of sources online to help you out.

I have also seen people plastic the entire floor and tape the seams then pull the car up onto it.
For exhaust of fumes tarp the opening of the garage door and funnel it into a good box fan or two so it removes the fumes and you don't asphyxiate yourself.
Also I would discuss what you are doing with your neighbors so they know whats up when they smell the fumes and when you will be doing it. This can save a lot of hassle with the cops and the EPA...trust me I have had to talk to both at the last import shop I worked for while we were still out of the guys house.

i remember this one house we were building, we had to keep the wet lands mud out of the wetlands... looked like effing morons sweeping up the topsoil mud deposits on the street back into the yards everyday.
