Ripping them from the CD, right? What kind of mp3 player do you have?
One of the easiest and most organized programs I have used is musicmatch.

Cdex with lame encoder the best you can use these days and don't do VBR!!! Do CBR its still much better sound; some disagree some agree. But I agree.
