I should have worded it more clearly. I didn't mean the thermostat working better, I meant the engine working better at 180F. The engine block will be cooler, but the piston/ring wont be significantly cooler, which may cause a smaller piston gap, or interference. I wouldn't go for the lower thermostat unless I knew for sure that GM did a bad job of engineering and that a 180f would work better.
