It's all about where you get it and what it looks like. I went to our local "trendy - Metro Mart Pick 'n Save" to get this fish. It's quality sushi grade Tuna that's delivered daily. $20 a lb so it better be f'n good. They wouldn't sell me the salmon though. This butcher was all about the sushi but they don't sell fish for folks making sushi. The grocery store has 3 sushi chiefs on staff but these guy's are seperate from the butcher and purchase their fish from a speacialized vendor. He wouldn't recomend their salmon to me or any other fish for that matter - except for the tuna. The tuna was the only fish that they know is safe and sanotized for consumption no matter how it's prepared. It's so fun and your significant other will get such a kick from it!
I didn't know this but all other fish other then tuna is considered "uncooked" but is "non-smoked smoke prepared". my brain was spinning when the butcher explained it to me. Apparently the fish is stored on ice and de-toxed through a hydrogen/monoxide infusion, keeping it fresh and uninhibited from bacteria. The only prob is it's extremely difficult to find in the midwest
