I break mine in for about 4-5k miles. First oil change at 1k miles OR 2-3 hours of run time, whichever comes first. Second oil change about 1500 miles after that, and the third oil change around the 5k mark, as long as you don't see any metal flaking in the oil anymore, all should be well, if you do, extend the break in period for another 1500 miles or so. Vary the engine speed, but try to avoid long pulls to redline, an occational run in first won't hurt, but for the most part, you should drive it like an Italian grandmother [quickly, but still not full-tilt]

No wide open throttle for the first thousand miles. Run the engine through it's RPM range, don't keep it at one RPM range. Change the oil after the first fire up to get your assembly lube out (you did use that didn't you?). Drain it through a coffee filter to look for particles of metal, gasket, sealant etc. Change oil at 1K then go on the 3K schedule and let her rip with WOT. Do not use synthetic oil for at least the first 12K miles.
This is what I did when I was rebuilding american iron. Haven't had to do anything to my acura yet. Knock on wood)
