Helms manual says non-platinum for Integra LS, Why?
I know that NGK and Densos are supposedly the best plugs to get, but why does my Helms manual say not to use platinums in my 96 LS Integra. The Helms says to use either NGK or Denso Platinums for GSR's, but not for LS's. Also, does non-platinum include iridium plugs?
What are the possible drawbacks of using copper, platinum, or iridium plugs? I know there's price differences, but I once heard something about platinum plugs damaging cylinder heads???

Depends on your driving habits, quality of tune your car has, etc. Copper plugs are so cheap that I'd change them as frequently as feels right to you. Have an extra set sitting around, and whenever you're under the hood, pull your spark plugs, look at them. If they're good, throw them back in. If the electrode is rounded, pitch them.
Platinums are used OEM in probably 90% of the cars built today. No issues.
