sub is starting to "bleat"

OK so your load is OK for the amp. That helps. We know that the amp is stable at least. That's good.
The foam thing not being on the sub can be a problem. I would highly suggest that you put them on. Ask your installer to put them on for you if he's close by. That way you don't have to worry about putting a hole in the surround trying to get them out.
If you don't have the gaskets anymore or if they are damaged, you can use plumber's putty in their place. The plumber's putty will act like the foam and will never dry up.
As for the gains. When running bridged you want them to be as close as possible to each other. The level of each will be determined by the signal out of the head unit. The gains need to matched to the HU's output. Since you're already at the shop, ask them to set them for you. Should only take a few minutes more.
