Default Aside from plugs/filter

What else do I need to change on a 7th gen 2001 EX? Idle is a little raspy and I think it just needs a tune up.

plug wires/cap/rotor/fuel filter/ pcv valve
that would be considered a tune up.
and do an oil change obviously, stay away from fram filters and i recommend castrol and mobil1 oil.

There's no distributor on those 7th gens, so no cap or rotor. As for plug wires, I'd test them before you bother switching them out, I learned that the hard way. By test, I mean the resistance and checking for cracks in the insulation. Doubt there's a need to change them at that mileage and year though.

If it's an auto, at that mileage I would change the trans. fluid just to be safe, and only use Genuine Honda ATF(not a bad idea to change the fluid if it's manual either), along w/ engine oil and filter, plugs and air filter as you already decided on doing, and PCV valve and fuel filter as raiden571 suggested.

Mobil is good oil, though you might have better results w/ their clean5000 than Mobil 1 as that is full synthetic, and might get past your seals(b/c of your car's age and mileage). If you don't mind the extra cost, as it does reduce friction, you can give it a go, maybe try 1/2 synthetic at first and if it doesn't use oil with that, go from there.

edit: if the idle still doesn't seem as smooth as it should be (assuming it's not a motor mount issue) I'd run some injector cleaner, Lucas or Seafoam are both good - I'd actually recommend that anyway at least once a year.

Sea Foam, hand down the best stuff I've ever used. The one pint can is around $8-10 at any given auto parts store, and WELL worth it.

I did my car today, and there was already a noticable difference in how smooth the idle became.

I can get a can for $6 at Menards locally, but it's $8 at Advance Auto. FWIW, Deep Creep (by Sea Foam) is good stuff too, but unless you plan to also use it to free stuck bolts, etc. (and PB blaster pry is better for that, plus cheaper) you might as well just use regular Sea Foam as it's a better bang for the buck IMO. However, Deep Creep would be my first choice to spray down the spark plug holes on a seized or hydro-locked engine.

After googling around it looks like changing the fuel filter isn't necessary? Looks like the filter is much different on 7th vs 6th gens, correct? Also is changing the PCV valve something that I could just have a repair shop do when I take it in for an oil change? How many miles do you 7th gen guys go between changes?

^ that came to mind, about the fuel filter, but wasn't sure. Some just have one located in the tank, that's meant to be used for the life of the car, unless you dump some pretty heinous shit into your tank. Changing the PCV valve is quite easy on many Hondas, but not all. And the PCV valve for 7th gens is more expensive (it's all metal) to my knowledge, I've seen $10-15. A shop should be able to take care of it no problem, anyone who has access to the service manual.
