Default temp gauge

I put a water temp gauge in my car a few days ago, and the tempo seems to jump around a lot when i acclerate. I put the probe in the unnder radiator hose. I rigged up a home depot special haha. It only jumps from 175 to 210 F, but does it fast.

But is this normal?

yes...when you accelerate you create more heat, and your water pump spins faster so you will see a quick rise in temp
