i heard somebody mention that i should pile the charcoals in a pyramid and stuff the middle of the pyramid with paper...
also, should i cover the briquettes while they burn? how long will the coals stay hot?
No need for paper. You're on the right track with the pyramid, that's what I meant to say.
Don't need to cover them, unless there is extreme wind.
Coals should give a good grilling surface for 45min - 1hr, but it'll depend on what type of charcoal you use. If you need longer, use more coals.
Evenly spreading the coals is really important, or else you'll end up with some stuff taking longer than others. Just use the back of your hand and feel the heat. Try and even it out as much as possible.
