one solution would be to take the whole damned thing out, and drill out the bolt, or get a bigger hex on it. they have the sharp indents, take a larger stanley screwdriver, angle it in the indents and hammer it a few times, that should jog it loose.
Drilling out the bolt has been a solution advocated on other boards, and it works fine, it's just a hassle.
I'm not sure what other paths there are if you stripped the bolt though...
