supposed to symbolize their purity. they are supposedly the purest of all mystic creatures.

My wife is obsessed with them as mystical creatures, unicorns and dragons. her favorite 80's movie is Legend (or something like that with brad pitt). it involves a unicorn some how. I fell asleep during it, but to each their own.
