yeah in our new office building we were going to wire it with cat6 but the installers wanted more money because they are a bitch to install. we plan on getting new phone system with power through the ethernet which is why we wanted cat 6 but cat 5e will do for now.
last company i was at, we had a new 7 story building built and we did all cat5e. we were doing PoE as well for all our phones. we were only doing 100mb to phones and pcs tho. but we were doing gig to all servers and switches. but uplinks to switches were all fiber
