If the resume and background check out, follow your instincts. Do your company policies include a probationary period upon hiring? I know its seems like they could do really well for the PP then act up but Ive found most colors will show within 90 days.

Ive always had it pretty easy. My business is not easy to get into and has low turnover. Since few have the training, you either know your shit or you dont so with a few choice questions I can weed out the pretenders pretty easily. Downside to my business? We have very strange personalities (and takes a strange personality really) and there are a lot of people that know their stuff but are total screw ups in the work ethic department.

Ask direct question about them professionally and a few non-offensive personal questions (hobbies, interests etc....). Be direct about what is expected and what kind of person you are looking for. Listen and read the person. Use your judgement. Loosen up because if you are feeling that nervous you wont be paying the right kind of attention to the personality type.

I have a link here so I dont type you to death. I learned a lot of lessons by who Ive had to fire. It sucks but it will make you better at just the questions you are asking in this thread. Dive in, no matter what you look up online or advice you get, a lot of this you are going to have to get by experience.
