Personally, I'd recommend finding a new mechanic, immediately. Your car is supposed to warm up. In fact, it performs better within a certain temperature range, which is why I recommend against the low-temp thermostats for daily driven cars.

Your car should be operating withing 190 and 220 degrees. Thermostat doesn't even open until 190.
