Overpowering is safer than underpowering for most people. With underpowering, you run the risk of sending in clipped signals when the user set the gains too high because they usually think that will increase the volume. The safest bet is course give the recommended wattage with a bit of headroom. And then learning to set the gains.

I have 1 sub. 1 sub is fine.

500 watts for the sub? eD nine.2 or if you really want some headroom, eD nine.2x

Placement of amp, under the seat is fine, just make sure it gets enough air movement down there. A few inches on all sides should be ok. Another concern to watch for are the vents under the seats, you dont want the amp down there next to the vents when the heater is on.
