I would not run that much torque on a stock pressure plate.

In terms of letting out fast, are you referring to the pedal pressure being so heavy that you tend to "pop" it out? You can get a PP that isnt so stiff, there are lots of options out now. Any way you slice it, a puck disc on a street setup wont be the smoothest engagement. I wouldnt run a stock PP that isnt capable of holding that power in order to make the clutch more streetable.
