offset is the distance between the centerline of the wheel and the mounting surface of the wheel, measured in millimeters.
stock offset is 55 on a 6.5" wheel. i'm thinking on an 8" wheel you might want to be somewhere between 45 and 48.
so far as the tire as concerned, on an 8" wheel you could go anywhere between 205 (it'd be a stretch) and probably 255, but i'm thinking 225 is probably the ideal width. 225/40/17 has a near identical overall diameter to stock as well. rub? once again not sure, but if you cut out the plastic tabs in the rear wheel wells, (where the rear bumper connects to the rear quarter panel) and have the right offset, you might not.
