This doesn't make any sense. If you roll the windows down and turn the heat up on defrost with a/c on, the condensation will go away immediately.

You must have a problem with moisture in the ventilation system. If the windows are closed and you have heat up on defrost with the a/c on, you must have a water puddle inside your car or inside your ducts.
