this is so that in case of rollover, since a rollcage would not be present your body and head is able to move in a certain way in to which your head would not be crushed
that is why you are supposed to mount the harness to a mounting bar, and not mount them like at a 45 degree angle or to the where the rear passenger seat area is?

well you want it at or above the shoulder height. or not more than 1" below your shoulder.
this is so you don't get spinal compression during an accident more than allowing you to move your head in a roll over.
you're pretty much locked in to the seat with the harness so you should not be able to move your upper torso at all.
