why is it so difficult
Heel-toe is always going to be a smoother downshift than "correct timing" because you're using some of your forward momentum to spin the engine up to a higher RPM than you were at, potentially upsetting the balance of the car.

For whatever it's worth, I have noticed that most Honda Challenge drivers rev match but do not heel/toe when downshifting.
I don't notice much heel/toe going on in Group 3 and Group 4, either, in the FF crowd.

I do it. I dont think I could be convinced that not doing it is faster

Are you saying that they are rev matching after getting off the brakes?
