Default Any Cooking People? (Thai Food)

I was wondering if anyone was good at cooking and thai food in general. My g/f likes Thai food, so i wanted to try and get a few recipes and attempt them for her. Anyone in here have some good recipes using chicken? We usually get like penang curry chicken when we go out. She likes it pretty spicey.

And any tricks on cooking white rice? I have never attempted but any time ive heard of people trying to make rice it usually turns out brown

easiest way is to get a rice cooker..othewise, use a pot, rinse the rice, and put approx. 1.5 cups of water to 1 cup of rice. keep in mind that the bottom of the pan will have a nice crusty layer of cooked rice..that's normal. also make sure that you have the short grain rice Asian people eat.

i'm still experimenting wit thai food cause my girly and I love it. try to make pad thai, and thum yum soup (sp?)

keep in mind that thai food uses alot of lemon grass, lemon, and tamarand paste to get the distinct flavor along with small Thai peppers.. :thumbup:

we only use japanese style rice.....(sticky) because chinese rice etc... is too skinny and dry.

i love eatting that kind of rice wit sushi, but if i wanna eat some chicken with that rice i'll be stuck licking the top of my gums all day like that Got Milk commercial w/ the peanut butter.

Thai is my favorite food, and I cook it all the time for DelSolGirl. The hardest part is finding "real" ingrediants, like kaffir lime leaves and fish sauce (GOOD fish sauce, not that Safeway BS), real fresh lemongrass, etc.

Here is a quick recipe for a good dish:
Beef with Basil

Get about 2 lbs of high-quality thin steak, and cut it into strips about half the size of your finger. Put the raw meat into a large-ish bowl. Marinate in soy sauce, freshly cut garlic (cut to whatever size you like best), pepper, a whole bunch of "hot sauce" (whatever you like best), and fresh basil. Optional: cut up one Habanero pepper, taking care to remove the seeds. These are HOT, so be cautious. Use enough soy sauce that approx. 1/2 the meat is covered by it - yes, it's going to be salty. Also - save about 20 leaves of basil for later.

Now slice and dice any 2 or 3 vegetables of your choice. Some options are green-beans, bell-peppers, onions, spring onions, etc.

Then prepare the rice. As the rice cooks, heat a large saucepan with some oil in it to medium heat, then add the meat marinade mixture. After the meat is about halfway cooked, add the vegetables. When everything is 9/10 cooked, add a VERY small amount of fish sauce - like 1 tsp. Finally, after everything has been cooked for a minute or two (the rice should be ready now), add all the fresh basil and let it cook (releasing its flavor) for about 30 seconds. Then dump everything into a large bowl and serve on top of the rice.

Yeah, Thai food > all other food. Luckily the DC Metro area is totally saturated in good Thai restaurants, so I don't have to salivate and suffer from a distance. DelSolGirl loves curries, I'm more partial to Kapow and Pad Pik.

Yea there are lots down here in my area as well that I like to eat at if my mom doesnt cook. I actually ate at several asian places off of King St and one of them was a Thai restaurant that was pretty authentic. )
