but yeah i miss the boba meat days... now everyone's all grown up, moved out, had kids, etc

I don't think they are ground. They are definitely chopped up bits of octopus. I heard sometimes it might even be a whole baby octopus.
They are good though. They're put in a batter and then put into a semi-circular cast iron pan.
