i've only made potato pancakes with previously made mashed potatoes.

add more potatoes, so there is less broth?

Dice 3 potatoes up
Chop up half a white or yellow onion
Chop up 3 cloves of garlic
Throw it all in a baking pan
Drizzle with olive oil and mix it all up
Heat on 375 degrees for 45 minutes (stir up occasionally and check for softness)

Enjoy!
