Gazpacho...:yumyum: ..eating a little of it now, but it needs to set over night for the flavors to blend.:yumyum:

In for knowing to let certain dishes hang out over night.

found a recipe. Never had it. Yours anything like this? I might try this some time.

We used:

2 cloves of garlic (smash under side of knife blade then chop)
1 large English Cucumber
1 large green pepper
1 large red pepper
1 large yellow pepper
1 large orange pepper
10 Roma tomatoes (Hydroponic from Canada)
3 stalks of celery
1 cup of baby carrots diced/sliced
Fresh chives
Fresh garlic whips (the green stalk of unmature garlic)
some fresh parsley (nice handful)
some olive oil
some vinegar
some lime juice (Nellie & Joe's Key West Lime Juice)
some lemon juice (Realemon)
4 shakes of McIlhenny's
6-8 shakes of Lea & Perrin Worcestershire Sauce
2 bottles of low sodium V-8 juice

I don't know if I forgot anything, but you can always add whatever vegetables you prefer that taste good cold. This soup was to use up veggies that you have laying around. We aren't big onion eaters so we use chives instead (they're milder)
