We did a 7 day Carnival cruise and went to Freeport (not so great), Grand Cayman (pretty fun), and Costa Maya (fun excursions in undiscovered Mexico). It was good stuff and extremely relaxing, which was what we needed after the whole wedding, finals, graduation experience. You'd probably be able to stay in one of the baller cabins and do whatever you wanted for your budget.
