today is holly's birthday, looking for some decent recipes for cornish game hens.

any positive insight is welcomed.

im making garlic rosemary potatoes to go with them, wondering if rosemary/thyme game hens would be too much of a good thing?

I think lemon pepper seasoning is the best thing for poultry.

Douse the hens in Italian dressing and let it marinade a bit, season with flat-leaf parsley and pepper?

I tried there looking for a decent roast ham recipe and only had one option. Of course, lacking creative skill, I opted to go their route and it was good.

this sounds simple and delish....

Garlic-Herb
Mix 2 tablespoons minced fresh garlic, 2 teaspoons finely chopped fresh thyme, 2 teaspoons finely chopped fresh rosemary, and 2 teaspoons finely chopped sage. Loosen the breast skin of each hen and rub one quarter of the mixture under the skin of each bird. Roast as directed.

im just scared that i will tear the skin off the breasts h:
