Default I'm in the kitchen today

Well my mother-in-law relented and has said that I can bake the pumpkin pie for Thanksgiving Dinner. I am in the process of making a pumpkin pie and a sweet potato pie. Pie shells are in the oven baking now.:yumyum: Unfortunately I will have to leave the brandy out of my sweet potato pie...but it's still :yumyum:

I made sweet potato pie once. Not bad for a rookie baker. It was nice to see the fam go for seconds.

Prepare a 10" pie shell, spread nut mixture evenly on the bottom, pour pie filling over until pie shell is nearly full. Bake at 375 for about an hour plus or minus, pie is ready when you put a knife in the middle and it comes out clean.

Yams are just a variety of sweet potato, and I use canned also, just not candied.
I used "Bruce's" Yams, (brand) sweet potatoes in syrup, the 40 oz can has a little more than 2 cups mashed without all the syrup.

Canned Yams aren't too bad. We have a favorite dish we do with them. You layer them in a casserole dish and sprinkle candied walnuts and a dollup of butter here and there. And then an ample sprinkle of mini-marshmellows. Sometimes we crumble brown sugar over the top. So once they're warmed in the oven you throw the whole dish in the broiler for a hot minute and carmelize the top. Pretty good stuff.

Mini-marshmellows FTW:joshers:
