Default Huevos Rancheros

I am going to cook this at some point, but I came up with the recipe tonight.

1 bag Ore-Ida Potatoes O'Brien or equivalent (hash browns w/ onions and peppers in em)
eggs, however many you feel like having
shredded cheese of your choice, like a mexican blend or sharp cheddar or whatever
smoked chorizo
diced tomato
fresh cilantro, chopped
salsa verde, I like La Preferida brand
canola oil
salt, pepper

Pretty simple, although it does require a couple pans on the stove and a bit of timing.

Chop up the cilantro and dice the tomato so you have it ready to go.

Get yer potatoes going in one pan, or bake em, I really don't know what you're supposed to do with them since I ain't read the bag yet.

Crack yer eggs open and scramble em. Or just use egg beaters instead, whatever you prefer.

Slice up the chorizo and start frying it a little in one pan. It doesn't need much since it's already smoked. Get a little of the fat rendered out, and splash in a tiiiiny bit of canola oil. Plop the eggs into the pan and scramble, which will happen pretty quickly so do this once the potatoes are pretty far along. Towards the end, throw some of the shredded cheese in with the chorizo and eggs.

Take a plate, throw some potatoes o'brien on there, cover em in the eggs/chorizo/cheese, throw on some diced tomatoes and cilantro. Plop on a bunch of salsa verde, and you're donesky.

So yeah, I'm a try and cook this over the weekend or something.

Very common where I grew up. Theres taco stands everywhere, thats actually easy to make. Flour Tortilla, Eggs, Hash Browns & Bacon = Great! All the rest of that is just spice and seasoning to taste. Make the potatoes first, they stay warm longest & eggs last. Good luck, pics when u make it!
