Her: Hey, Josh emailed me today and asked if I'd have lunch with him
Me: Who's Josh?
Her: A guy I dated for a couple months a while ago....it's not like you think, I don't want him and he's with someone too, it's just a friendly type thing.
Me: Are you serious? You're really entertaining this?
Her: Well, not if it's gonna be a problem.....
Me: WOW!......I'm.......................
Her: I won't go if you don't want me to
Me: You're a grown woman, I can't tell you what you can or can't do, so you do what you wanna and we'll deal with the results of your decision when it's time.
The convo didn't end there, and come to find out, she had been emailing this dude back and forth for the past week or so(at least that's what she's fessing to), but she claims it to be simply a friendship thing. So I asked if he's a friend, how come you've never mentioned him before and we've never met?
Anyways, we've known each other for about 6-7 months and have been going out for about a month. I've decided to drop her because of this, it just seems real shady and i'm not cool with that. Am I overreacting? Should I take what she's saying at face value and get over it?

it doesn't really matter what you say. she'll do what she wants to do. so there's really no point in getting mad over it. and if she wants to be with him, she's not worth it anyway.
You don't trust her...and you also pulled the girl move by telling her she can do what she wants when you really mean "hell no." Be honest and be mature. If you trust her, theres nothing to fear.
