Default Computer Peeps: Easy Backups for the computer illiterate

So about 9 months ago when my mom bought me my laptop for my birthday, I decided to give her my old P.C.. At the time I had just done a fresh install because I purchased a new hard drive for it. The computer has worked flawlessly until about a few days ago when it started to reset itself and freezing. Now, the computer won't go past Windows Loading screen. The computer won't load the last known configuration or even in safe mode. I am thinking that a file or files got corrupted somehow. Not sure how since I idiot proofed it with Symantec virus scan and MS Anti Spyware.

So anyway, I am going down next weekend to fix it / rebuild it. Are there any easy ways to backup the computer so if it happens again she can just do a recovery instead of me having to go to MD (2 hour drive, no car, etc.)? I built the computer myself so there is no "restore system" in place. The first thing I am going to do is to put in a second hard drive and have her documents automatically back up to that.

Any help is appreciated.

When I get home I can get you a system backup and restore program. I'll send the serial codes too.
